Chicken Sandwich with Pesto and Brie

The chicken sandwhich, a famous urban classic. All the best deli's in town have their own version of a common theme, using a varity of toppings and cheeses. Today, at the urban cooking guide we present our version, inspired by the deli's of downtown Vancouver, BC, Canada. With healthy lean chicken, fresh vegetables, pesto, and brie; this healthy sandwich will bring the taste of trendy downtown Vancouver into your kitchen.
Ingredients:
- 1/4 Chicken breast cut into flat strips
- Fresh Tomato
- Red, yellow, or orange pepper
- Diced onions
- Brown mushrooms
- 2 leaves of lettuce
- Pesto
- Brie cut into thin slices
- Thickly sliced bread. We recommend large rye, sour dough, or focaccia. You may also use white or whole wheat!
It is up to your personal taste to determine how much pepper, onions, tomato, mushrooms, lettuce, and cheese you will want. This recipe only provides the ingredients. Customize your wonderful sandwich to your personal taste!
Directions:
1) Fry the chicken until lightly cooked and turn off stove. For an added taste, add a small amount of oil-based italian or greek salad dressing while cooling.
2) Take two slices of bread and prepare them by spreading pesto onto one side. You may add some salt or fresh ground pepper for extra taste!
3) Place freshly sliced vegetables (minus the lettuce and tomatoes) onto the pesto side of the bread.
4) Place chicken and brie strips overtop the vegetables. Close your sandwich, because
now you will have a nicely stacked sandwich! It is time to toast it in the oven.
5) Place sandwich in oven and toast until cheese melts and bread is golden brown!
6) Take sandwich out of oven and open up to put lettuce and tomato in.
7) Congratulations, you are done! Enjoy!
