Egg-cellent Toast, Egg In Toast, Eggs in a blanket






Egg-cellent Toast -- the super quick and easy to clean breakfast treat! This European dish is perfect for our fast paced lifestyles.

Makes 2 servings.

To make this dish, you will need the following ingredients:
- 2 large eggs.
- 2 slices bread (I prefer multi-grain or brown, but you may use your favorite)
- 2 tablespoons butter

Preparation:
1) Cut a circular hole in the center of the bread with about a 3 inch diameter

Cooking:
1) Heat a frying pan to medium-high
2) Place 1 tablespoon of butter into the pan and let it melt. Be careful to not let the butter burn.
3) Place bread (with a hole in it) into the center of the frying pan.
4) Crack an egg into the hole. Let it run over the top and absorb into the bread.
5) Move the bread around in the pan to absorb butter for flavor.
6) Let egg cook until done on the bottom and cooked to the middle of the bread.
7) With a spatula, flip the bread to the other side. If you do this right, the egg will stay under the bread.
8) Move the bread around in the pan to absorb butter for flavor.
9) Let bread and egg cook for a few minutes or until desired egg texture is reached. If you do not like your yolk runny, puncture the top of the egg so it begins to leak out.
10) Flip the egg to cook the punctured yolk.
11) Remove from pan, and put onto a plate
11) Repeat the process above for the other piece of bread.

Presentation:
1) Place cooked bread and egg on a plate.
2) For an added treat fry some deli sliced ham or turkey!
3) Serve with your favorite flavoring (Seasoning salt, salsa, or ketchup work wonders!)
