Wonderful Egg Muffin Breakfast Sandwiches

We all like Wonderful English Muffin Egg Breakfast Sandwiches!
These breakfast sandwiches are just like the McDonald's Egg McMuffins, only healthier with real egg. They are quick and easy to make and best of all, vegetarian!
Yields: 2 Breakfast Sandwiches
Ingredients:
- 2 English Muffins
- 1/4 Small Bell Pepper (Yellow, or Orange to add colour)
- 1/4 Small Onion
- 8-12 Medium Spinach Leaves
- 2 Large Eggs
- 4 Slices of Cheese
- Hollandaise or A1 sauce ( depending on what flavor you enjoy).
- Seasonings: Black pepper, Italian Seasoning, Salt
- Oil
Instructions:
1) Heat medium frying pan to medium high. Add a small amount of oil to bottom of pan.
2) Crack egg into pan. Make sure that the pan is hot and the egg begins to cook as soon as it hits the pan. If done correctly, your egg will stay in a circular shape.
3) Flip egg and cook the other side. You may have to break up the yoke in the middle and flip it a few times. This is a good time to add spices to the egg patty (pepper and seasonings).
4) Place fried egg patties on paper towel to absorb excess oil.
5) Slightly toast English muffins with cheese and spices in oven. Places spices on the cheese so that they will blend when the cheese melts.
6) As the muffins are toasting, cut bell pepper, and onions into small pieces to your liking.
7) Remove muffins from oven. Muffins should be just slightly toasted with cheese melted.
8) Place egg patty on muffin. Spread Hollandaise or A1 sauce on top to your liking. We love a lot of Hollandaise, but if you choose A1, just add a little bit as it is strong and flavorful.
9) Place peppers, onions, and spinach on the egg patty and close the sandwich!
10) Enjoy!
