Gyozas and Dipping Sauce

Gyozas are Japanese dumplings which originated from China. They taste wonderful and can be eaten as a meal or a snack... but who has the time to make gyozas from scratch today? You can save some time by just going down to your local grocer and picking up a package of 50 for under $10. (They come in a variety of fillings, including pork, beef, and vegetarian at Hon's here in Vancouver.) After you get home, pan fry them up and then make your own gyoza dipping sauce. They're absolutely scrumptious!
Ingredients:
- as many gyozas as you can eat (I make 10)
- a bit of oil (roughly 15 mL)
- a bit of water (roughly 30 mL)
for the sauce: (yields 1/2 cup)
-15 mL of white sugar
-15 mL of rice vinegar
-15 mL of sesame oil
-30 mL of soy sauce
-75 mL of water
-1 stalk of green onion, chopped
-1 clove of garlic, minced
Directions for pan-frying gyozas to perfection:
1) Turn stove element up to high and put a bit of oil (about 15 mL for 10 gyozas) in a nonstick frying pan
2) When oil is hot, put gyozas (you don't have to allow for them to defrost) into pan
3) Keep flipping gyozas until they are slightly golden brown
4) Turn down heat to medium
5) Pour a bit of water into the pan and quickly cover with a lid
6) Allow for gyozas to steam for 5- 10 minutes (or until all of the water has evaporated)
7) Lift lid and turn heat back up to high
8) Allow for gyozas to crisp up and turn a richer golden brown on both sides
9) When the gyozas are crispy enough to your liking, they are done!
10) Turn off the stove and serve.
Directions for making gyoza sauce:
(make your sauce ahead of time or while you are waiting for gyozas to steam in step 6 above)
1) Mix all of the gyoza sauce ingredients together in a bowl
2) Serve with your gyozas :)
