Anything's Possible Vegetarian Potato Bake

This is a great tasting, healthy side-dish that can also be served alone as a meal in itself. And best of all, not only is it vegetarian-friendly... it's vegan as well!
Makes 2-3 large servings.
Ingredients:
- 11 small red potatoes
- 5-6 cloves of garlic
- 1 medium white onion
- 2-3 sprigs of fresh dill
- 2-3 sprigs of fresh oregano
- pinch of sea salt
- pinch of freshly ground pepper
- olive oil
- 1/2 small jalapeno pepper (optional)
*Add a pinch (or more) of your favourite herbs and seasonings (marjoram, thyme, rosemary... etc.) What we suggest is only a start!
Preparation:
1) Clean red potatoes and leave skin on.
2) Cut potatoes into large bite size pieces.
3) Chop garlic into fine pieces.
4) Dice onion.
5) Chop fresh herbs and jalapeno pepper finely.
6) Place all of the chopped ingredients into a large casserole dish.
7) Drizzle olive oil lightly over potato mixture, and mix. The idea is to lightly coat the potatoes and onions, but not drench them in oil!
8) Add salt and pepper and mix.
9) Cover casserole dish with lid. If you don't have a lid, use an aluminum foil cover (make sure the shiny side is facing down, covering the potatoes!) and puncture a few holes into the foil with a fork for ventilation.
10) Bake at 350 degrees for 1 hour. At the 30 minute mark, check the potatoes and stir them with a wooden spoon. After 1 hour, remove the lid and let bake for 15 more minutes.
11) Let the potato bake cool a bit and add salt and/or pepper to your taste.
12) Enjoy with family and friends!
