Eggcellent Vegetarian Scrambled Tofu

Here's an easy recipe for the health-conscious and you vegans out there. Scrambled eggs made out of tofu... and completely egg-less. We were doubtful at first... but you have to give it a try. Only using very few ingredients, it is quick, healthy and so delicious!
Makes 1 large serving
Ingredients:
- 1 package of soft or medium firm tofu (300 grams)
- 3 cloves of garlic
- 1/2 cup of your favourite veggies
- dash of vegetable oil
- 2 teaspoons of soy sauce
- ground black pepper
- pinch of curry
- your favourite herbs and/or spices (optional)
Instructions:
1) Peel garlic cloves and mince. Chop veggies (We used frozen veggie mix because we were lazy, but you can try anything... spinach, mushrooms, tomatoes, etc.)
2) In a medium frying pan over medium-high heat, put oil, garlic and veggies in and saute for 5 minutes.
3) Put tofu into frying pan and using the spatula, break into large bite-sized pieces.
4) Add soy sauce and freshly ground black pepper, stirring gently.
5) Add a pinch of curry powder for eggy colour and extra spice. This is optional... you can also add herbs, seasonings and spices at this point. Try italian seasoning, or cumin, turmeric, coriander... the possibilities are endless!
6) Lightly stir and turn heat down to medium. Allow tofu to cook for approximately 10 minutes or so, gently stirring every so often. You are done when all of the moisture has evaporated.
7) Turn off element. At this point, we added about a tablespoon of margarine and mixed it into our scrambled tofu as we like our "eggs" a little richer. This step is completely optional though.
8) Garnish with chopped green onion and serve. Add salsa, or a generous sprinkle of grated soy cheese on top for an extra treat.
9) Be prepared to be wowed and please enjoy!
