Splendid Spinach Salad






We love spinach and we love mushrooms. We put them into almost every meal we make here at the urban cooking guide centre. Here's a recipe that uses spinach and mushrooms at its most basic, paired with a delicious and healthy citrus vinaigrette.

Makes 2-4 servings

Ingredients for Salad:
- 1 bunch of spinach
- 1 1/2 cup of sliced mushrooms
- 1/2 red onion, sliced thinly
- 1/3 cup of toasted chopped walnuts

Ingredients for Vinaigrette:
- 1/2 cup of orange juice
- 1/4 cup of vegetable oil
- 1 garlic clove, minced
- 2 tablespoons white sugar
- 2 tablespoons vinegar
- pinch of salt and pepper

Preparation:
1) Chop your veggies and toss them in a big salad bowl.
2) Put walnuts in the oven under broil for 2-5 minutes until toasted.
3) Take walnuts out of oven and let cool.
4) Put your vinaigrette ingredients into a jar. Seal and shake.
5) Sprinkle chopped walnuts over the salad and serve with citrus vinaigrette.
6) Enjoy!
