Vegan Apple Pancakes

Pancakes always taste better if you make them yourself! Don't buy them from a box out of the frozen section of your local grocer. I promise you... making pancakes can be no fuss and no mess... and great fun too! Here's a recipe that's healthy, low fat and vegan.
Makes 6 large pancakes
Ingredients:
- 1/2 cup of flour
- 1/2 cup of oatmeal
- 2 teaspoons of baking powder
- 1 tablespoon of brown sugar
- 1 tablespoon of vegetable oil
- 1 cup of juice (I'm using apple juice, but try something else for variety)
- 1 medium apple, sliced thinly
- 1 teaspoon of cinnamon (optional)
(*note: Apple pancakes are only the beginning! Try a combination of orange juice, orange zest, and fresh ground ginger. Or orange juice and fresh berries. How about soymilk with banana slices and chocolate chips? Use your imagination!)
Preparation:
1) Mix all of your ingredients together in a large mixing bowl
2) Put a little bit of oil in a non-stick frying pan over medium heat
3) Carefully ladle your pancake mixture into the pan
4) Cook until both sides are lightly browned
5) Serve with maple syrup and/or margarine and enjoy!
