Healthy Vegetarian Mini Pizza






Vegetarian Mini Pizza Today we share the recipe for one of our old time favourites -- Healthy Vegetarian Mini Pizzas.

It's quick, healthy, veggie and easy. Perfect for a light snack or eat two for a yummy dinner! Satisfy your pizza crave without the guilt!

Yields 2 mini pizzas

Ingredients:

- 1/4 medium sized onion
- sliced olives
- tomato sauce and/or pesto
- cheddar or mozzarella cheese
- 1/4 yellow, red, or green pepper
- spinach leaves
- 3-4 brown or white mushrooms
- italian seasoning (basil, oregano, marjoram, and sage)
- garlic powder
- thick flatbread pita (we used olafson athena classic veggie greek style flat bread pitas)

Instructions:
1) Preheat oven to 350 degrees celsius.
2) Spead tomato sauce and/or pesto onto your thick flatbread pita.
3) Add a light sprinkling of Italian seasoning and garlic powder on top of the sauce.
4) Place spinach leaves (use fresh, not frozen!) on top of your sauce.
5) Slice peppers, mushrooms, and onions thinly.
6) Put sliced veggies and olives on top of the spinach.
7) Grate the cheese and spread over your veggies.
8) Put your pizzas onto a baking sheet and pop them into the oven. Bake them until the cheese has melted (or approximately 5-10 minutes), but keep a close eye on them so that they don't burn!
9) Pull them out of the oven and serve.
10) Enjoy!

*Note that this is only the beginning... experiment by using different cheeses! Try your favourite vegetables or even veggie pepperoni! The possibilities are go on and on and on......
