Vegetarian Panini Sandwich






Vegetarian Panini Sandwich This is a recipe for one of the best vegetarian sandwiches you'll ever taste, toasted on panini bread. Make it vegan by omitting the cheese... don't worry, it'll still be just as good!

Makes 1 serving.

Ingredients:
- 1 panini bun (should be available at your local urban bakery)
- pesto sauce
- salt and pepper
- sliced cheese (I used marble)

- the veggies: (amount is up to you according to your preference)
-- thinly sliced cucumber
-- canned sliced olives
-- thinly sliced red pepper
-- spinach leaves
-- thinly sliced onions
-- thinly sliced mushrooms


Preparation:
1) Slice panini bread in half and spread both sides with pesto sauce
2) Place olives and then the rest of the veggies (minus the spinach and cucumber) evenly onto both sides of bread
3) Put cheese over veggies and put into oven for a quick broil
4) Leave in oven til cheese melts
(*note: for vegan option: put both sides of bread into oven for broil, without the cheese, but watch out the veggies don't burn!)
5) Pull sandwich out of oven and add a dash of salt and pepper
6) Place spinach leaves and cucumber onto both pieces of bread and close sandwich
7) Voila and enjoy!
